Stuffed Taco Bread is an easy baked tacos recipe. Seasoned ground beef is surrounded with cheesy goodness in toasted bread and then topped with a taco lime sour cream and your favorite taco toppings. Perfect for your Taco Tuesday dinner or as an appetizer at your next fiesta!

Combine sour cream, 1 tsp. taco seasoning and lime zest.

Slice taco bread into 4 pieces and top with Taco Lime Sour cream, tomatoes, scallions and cilantro leaves.
Ingredients
- 1 lb. lean ground beef
- 2 Tbs. taco seasoning
- 1 can (10 ounces) Rotel diced tomatoes & green chilies
- 2 Tbs. tomato paste
- 1 loaf French bread , halved lengthwise, about 12-inches long
- 1 ½ cups shredded cheddar cheese ,divided
- ½ cup sour cream
- 1 tsp. taco seasoning
- 1 tsp. lime zest
- 1 cup chopped tomatoes
- 1/3 cup chopped scallions
- 2 Tbs. cilantro leaves
Instructions
- Preheat oven to 400F.
- Meanwhile, heat a 10-inch non-stick skillet over medium-high heat and cook ground beef and 2 Tbs. taco seasoning until beef is browned, stirring occasionally.
- Stir in diced tomatoes & chilies and tomato paste and simmer until beef is cooked through and mixture is thick and saucy, about 7 minutes, stirring occasionally.
- Hallow out bread halves and sprinkle with 1 cup shredded cheese.
- Arrange on baking sheet and bake until cheese is melted, 5 minutes.
- Remove bread from oven and fill with beef mixture. Sprinkle with remaining ½ cup shredded cheese.
- Return bread to oven and bake until heated through and cheese is melted, 5 minutes.
